VEGANISM- are you in or out?
I have yet to meet ANYONE who doesn’t have an immediate reaction or an opinion about Veganism.
It seems to be a hot topic, and extremely polarising! At Kitchen By Mike in the Sydney CBD we offer outrageously tasty vegan options for lunch and dinner. So, lets talk vegan…
There are just so many different camps:
The bone broth camp
The ancestral diet camp
The high protein Keto camp
The pescatarian camp
The vegetarian camp
The low fat/skinny cap/extra foam/extra hot/no lid/caramel latte/……camp (wink).
At Kitchen by Mike, we don’t belong to any camp. I believe in listening to you body and eating in accordance with mother nature and the seasons.
Sometimes I like to go fully meaty to satisfy those caveman cravings and other times we feel like having, shall we say, a lighter footprint on both the planet and our digestive systems. Most importantly at KBM we are all inclusive and want to give EVERYONE the option to have a wholly satisfying and nourishing experience.
That’s why I offer a great deal of VEGAN food options and Vegetarian food which you can eat as they are, or team up with something ‘more’ from our canteen. If everyone tried to do a little more to lesson our carbon footprint, in the grand scheme we will all imprint a whole lot less on our planet.
We also contribute by eating Sydney seasonal and Sydney local produce!
SO, LETS TALK VEGAN FOOD
When you hear that word VEGAN – what images immediately spring to mind?
Far too often, the word vegan is synonymous with food being bland!
NEWSFLASH vegan food does not have to be bland, boring, repetitive, lacking in flavour, unsatisfying, or lentil based…………. It can be healthy, raw and vegan, but it can also be rich and lavish and delicious.
Nowadays the sky’s the limit.
And you don’t necessarily need all those processed fake meats (unless you want them & there are some great ones out there) to keep your meals nutrient dense. At Kitchen By Mike, we offer a plethora of vegan salads and mains. These range from raw vegan food, made with organic vegetables, or hearty wholesome vegetarian main. Even Kale can be delightful at KBM (with enough salt 😉). Hearty Veggie food in the heart of the city. One of our most beloved favourites is actually our Vegan cakes. Especially the vegan chocolate cake!
MY Mantra:
SEASONING IS EVERYTHING
Don’t skimp on (good quality) Salt and Black Pepper
Herbs are little powerhouses - not only do they pack a nutritional punch, they also take your dishes to the next level in terms of flavour
And to prove it here are a couple of AWESOME vegan dressings and staples for your LARDER
So you can turn anything into a SENSATIONAL dish. With love from ME to YOU.
Ponzu – 100ml
1 ½ tablespoons soy sauce
60ml Japanese Rice Vinegar
1 Lemon- juiced
Combine all ingredients and shake well. Keep in a jar in the fridge and dress everything and anything…… goes particularly well with sliced cucumbers & coriander. EASY!
Indian Spice Mix
1tsp Coriander seeds
1tsp Cumin seeds
2 tsp Fennel seeds
5 cardamom pods (seeds only)
1 Cinnamon stick
5 Cloves
1 tsp mild chilli flakes
1 tsp ground Turmeric.
Warm a small frying pan over a medium heat and add all the spices except the Turmeric. Toast the mixture for about 2 mins moving the pan so the seeds don’t burn. Once the mixture is aromatic and golden brown, remove from heat and grind in a pestle and mortar or spice grinder. Finally stir in the Turmeric. Keep in a jar and use liberally in dhaals, curries, soups and stews.
INFUSE OLIVE OIL with Rosemary branches / Garlic / Basil Leaves / Toasted Chilli flakes
